When we asked Charleston Grill Executive Pastry Chef, Emily Cookson if she could share one of her holiday treats with us, she gladly replied with a family recipe for shortbread cookies. These delightful cookies were once a holiday tradition that Emily shared with her grandmother. Every Christmas season the two of them would create delicate and delicious shortbread cookies in the shapes of Christmas wreaths and reindeer.
Now you too can create these undeniably delectable and charming shortbread cookies at home with your family. Gather some of your favorite holiday cookie cutter shapes, red and green sprinkles and bake up some holiday cheer.
Emily’s Shortbread Cookies
2 ¼ cup
Using a stand mixer with a paddle attachment, cream room temperature butter and brown sugar. Sift dry ingredients and add to the mixer. Paddle until incorporated. Remove from the bowl and wrap in plastic wrap and allow to chill for 30 minutes. On a lightly floured surface, roll dough to ¼ inch thickness and cut out in desired shapes. Chill for 30 minutes. Sprinkle with colored sugars. Bake at 350 degrees until golden brown, approximately 7-12 minutes. Enjoy!
